Established in 1877.

After overcoming the wave of downsizing in the sake industry, the beginning of the Heisei era ushered in Kyoji Ikeda’s unique brewing style that made the most of the brewery’s individuality. The brewery is dedicated to pure rice sake made from 100% rice, pursuing the true taste of sake and forgetting about the cost performance of the product. Although it is common to use enzymes to promote fermentation for stable sake brewing, Ikeda Shuzo brews sake using only rice and koji without enzymes. The brewery is a small-scale brewery run by Kyoji and his wife and a few other brewers, which makes it possible to make sake slowly and meticulously, bringing out the power of the ingredients. The brewing water is underground from the Yura River, which flows right next to the brewery, and the rice is mainly grown locally in the Yura River basin. When you take a sip of Ikeda Sake Brewery's sake, you can feel the rich and nourishing flavor of the natural scenery that exists along the Yura River.

In 2014, I became the fifth generation brewer when I took over the brewery. With my wife, who is also a master brewer and a chef, we work to make sake that we truly enjoy. We try to use as many ingredients as possible that allow us to connect personally to the people producing them, and our production is simple and careful. We don't usually accept tours of the brewery, but we open the brewery once a year during the Tango Tenshu Festival (sake festival at the end of May). The store is always open for purchase, so please feel free to stop by.

Special Junmai Kasa Ichiyo

This sake is made from Kyoto's sake rice, "Iwai" and "Kyo no Kagari". The sake is bottled immediately after pressing and heating, so it is full of freshness.

Junmai Ginjo Ikegun - Iwai

This sake is made from 100% "Iwai" sake rice, which is grown only in Kyoto Prefecture. Enjoy it at room temperature or slightly chilled for a plump mouthfeel and a dry, crisp taste.

Junmai Daiginjo Ikegun

This sake is made by fermenting Yamada Nishiki rice at a low temperature and pressing it gently. You can enjoy the gorgeous aroma and refreshing sweetness of Daiginjo. A gem that has gained popularity overseas as well.
