A sushi restaurant serving Maizuru Port’s fish with local rice

Hanazushi has a wide selection of seafood, mainly fish purchased from Maizuru Port, and the rice is grown in Fukuchiyama. The vegetables are also mainly grown by local farmers. Hanazushi focuses on local products for local consumption, and the sushi is Edo-mae style, which is rare in Fukuchiyama. A feature of the restaurant is the effort taken to balance seasonal seafood with other ingredients and even aged seafood to bring out the best of each for each season. Each course is designed not to share, but to be eaten by one individual, because the chef believes it’s important to have variety. There are a variety of side dishes that are fun to mix and match. In addition to the counter, there is a tatami mat area and private rooms, which are good for families with small children. In addition to the variety of dishes, Hanazushi also has souvenirs like dashi stock and rice toppings.

After training in Kyoto city and Yamashina, he became independent in Fukuchiyama. I wanted to create a restaurant that people would want to frequent. So we created dishes that can be shared among friends and family, but also have dishes that children can eat separately. We mainly use local ingredients, and some fish are aged to bring out the flavor. There are many dishes, so if you want to eat various things, the course meal is recommended. You can start with one dish, and then add-on other orders as you go.
